Every hour this workflow reads the unread mail sitting in your inbox and sorts it using labels you define in plain language. You describe the categories once - for example 'Invoice for billing emails, Recruiting for candidate outreach, Newsletter for bulk mail' - and each message is read against those rules and labelled accordingly.
A message that matches none of your rules is deliberately left untouched rather than forced into the closest category, so the labels you do see stay trustworthy. Labels are created automatically the first time they are used, and one message that cannot be processed is logged and skipped instead of stopping the run.
